My wife Lisa makes some really good Lasanga.
1 ½ lbs ground meat (deer sasauge is really good too)
1 onion
3 toes chopped garlic
½ tbl dried parsley
1 can tomato paste
1 can tomatoes (or can of drained Ro-tel)
2 tbl red wine
Directions:
Fry ground meat, (drain) add onion parsley and garlic. Add 2 tbls. Of wine.
Let cook 15 mins' and tomato paste and tomatoes. Add 1 can of water.
Cook 45 min.s (salt & pepper to taste)
Cook noodles
Layer of noodles, layer of meat, layer of cheese (moztarella and cheddar)
Bake uncovered 1 hr.
I just ate a little while ago, but that Lasagna sure does sound good!
Over time, we are going to have a "complete cooks book", right here, amongst all of the UFO and alien stuff! ;D

Tonight we made mexican lasagna, with...Rotel tomatoes!
And Lasagna is a Christmas favortie around my house.

Here goes
16 white corn tortillas preferably organic
3 lbs ground beef
1 cup cabernet sauvignon
1 tsp chili powder
1/2 tsp cumin
1 tsp dried oregano
1/2 tsp red pepper flakes
1/2 tsp black pepper
4 cloves garlic chopped
3 cups organic diced tomatoes, canned(I know I know)
1 can organic tomato paste
2 tbs brown sugar
salt to taste
16 ouces of shredded cheddar cheese
in a saute pan slowly simmer the meat with the garlic, and spices until halfway cooked, then deglaze with the wine, and simmer for another ten minutes to cook off the alchohol scent and flavor. reduce until wine is absorbed into the meat.
in a bowl, mix the tomatoes, paste, and brown sugar to form a thick sauce
Line a 9x13 inch baking pan with a layer of corn tortillas(8) then add the meat mixture
cover the meat mixture with the tomato mixture, half the cheese, and the remaining tortillas
sprinkle with reamining cheese, and bake for 30 minutes at 350 degrees F.
I came up with this when i was 19 yrs old, and used it to convince my wife's parents to let her marry me! It worked, and were together 25 years now!

Tuna or chicken salad. Start with your choice of tuna or chicken. Add diced red onion, chopped green olives, chopped parsley, a small amt of fresh basil, curry powder and mayonnaise. Mix thoroughly. This can also be done with pasta to make a pasta salad.
