Venison roast

Does anyone have a good tasty recipe for cooking a venison roast?

sounds like someone got a deer..my guys are at bear camp right now and I am hoping they just take pictures

anywho
you can try one of those oven bags.. they work pretty good .. you can even toss in some onions, carrots and potatoes if you want

venison is very lean so I usually make a light rub with a small amount of some good olive oil / or butter, pepper and salt and let it marinate in a open zip lock for a good half hour at room temp
you can add spices if you like but I don't

then into a roasting pan  with a rack
I don't like to cook venison in metal so I either use a glass pan or an enameled one
yeah yeah I know the rack is usually metal but that doesn't seem to change the taste of the meat like a metal pan does

I put the meat and veggies on the rack and pour a liquid below..this will help with moisture as venison is on the dry side
liquid can be broth or just water..I prefer chicken low salt broth with no msg


I've tried different temps and times and what we like for a good 2 + inch thick roast is about 30 min. on 375 with a piece of alum foil just  lightly over the pan
and then maybe 15 to 30 with no cover..time depends on if you are going by temp for doneness or med well / well
or something else... we like it just done not over done and if you can't decide..cut off a piece and try it but remember that the end and middle will be different done ness and adjust with that knowledge

I have argued with guys who don't like to cover it at all or cover it tightly the whole time..mostly a matter of taste

if you have a buck in rut it's going to take a different approach
i am picky and only roast a young early season archery kill for roasts
bucks in rut  are only good for braggin about the horns..imo

Thanks. I don't hunt but I have friends that do and I scored a couple of roasts. Just wanted some different ideas.

i mistakenly thought you were a first time venison cook

how do you cook your roast?

Brown all around. I have an electric pan that I put two cups of water and let it cook  until it's done. I also add onion and a quarter cup of red wine and cajun seasonings. Remove when done and then add in some flour to thicken up the gravy.

sounds good
if you brown and then use a rack with liquid below you get  a more moist piece of meat as well as more tender
broth will give you more flavor when you make gravy than water

if you decide to change your method let us know how it worked
